Eggplant Casserole - cooking recipe
Ingredients

1 eggplant, boiled and drained
1/2 can cream of Cheddar soup
2 Tbsp. grated cheese
2 eggs, beaten
2 slices toasted bread crumbs
1/2 c. milk
1 c. stewed tomatoes
1 finely chopped green pepper
sprinkling of: basil, nutmeg, salt, pepper and dried onion flakes
Preparation

Mix together and top with dry bread crumbs.
Bake at moderate oven heat until done, about 45 minutes.
