Basil And Broccoli Chicken - cooking recipe

Ingredients
    4 chicken breasts, boned and skinned
    salt and pepper to taste
    2 Tbsp. margarine
    1 (6.9 oz.) pkg. Rice-A-Roni (chicken flavor)
    1 tsp. dried basil
    2 c. broccoli flowerets
    1 medium tomato, chopped
    1 c. (4 oz.) shredded Mozzarella cheese
Preparation
    Sprinkle chicken with salt and pepper.
    Brown in margarine; cook until tender.
    Remove chicken.
    Add rice to drippings; saute until rice is golden brown.
    Stir in 2 1/2 cups of water, contents of seasoning packet and basil.
    Place chicken over rice mixture; bring to a boil over high heat.
    Cover, reduce heat and simmer 15 minutes.
    Top with broccoli and tomatoes.
    Cover; continue to simmer 5 minutes or until liquid is absorbed and chicken is well cooked.
    Sprinkle with cheese.
    Cover; let stand a few minutes before serving.
