Lemon Muffins - cooking recipe
Ingredients

1 c. butter or shortening
1 c. sugar
4 eggs, separated
1/2 c. lemon juice
2 c. flour
2 tsp. baking powder
1 tsp. salt
2 tsp. grated lemon peel
Preparation

Cream butter and sugar until smooth.
Add well-beaten egg yolks and beat until light.
Add the lemon juice alternately with the flour which has been sifted with baking powder and salt, mixing thoroughly after each addition (do not overmix).
Fold in stiffly beaten egg whites and grated lemon peel.
Fill buttered muffin pans 3/4 full and bake at 375\u00b0 for about 20 minutes.
Makes 24.
