Crab And Shrimp Croquettes - cooking recipe

Ingredients
    2 c. cooked shrimp and crabmeat
    2 c. mashed potatoes
    1/2 tsp. salt
    1/8 tsp. pepper
    1 egg
    1 Tbsp. chopped parsley
    1 tsp. lemon juice
    flour
    seasoned bread crumbs
    fat (for deep frying)
Preparation
    Mix together shrimp, crabmeat, potatoes, salt, pepper, egg, parsley and lemon juice.
    This should be a fairly dry mixture that can be easily shaped into a croquette.
    Refrigerate shaped croquettes at least an hour.
    Roll croquette in flour, then in seasoned bread crumbs.
    Heat fat to 375\u00b0 in deep kettle.
    Put in a few croquettes so they will have room to brown evenly on all sides. Cook about 3 minutes each.
    Garnish with parsley and lemon.
    Makes 12 croquettes.
