Greenbriar Hotel Pumpkin Cake - cooking recipe

4 eggs
2 c. sugar
2 c. pumpkin
1 c. vegetable oil
2 c. cake flour
2 tsp. salt
2 tsp. cinnamon
2 tsp. baking powder
Preparation

In large mixing bowl beat eggs and sugar together until light and fluffy.
Blend in oil, then pumpkin.
Mix well.
Add flour, baking powder, salt and cinnamon.
Blend well.
Pour batter into a greased and floured 10-inch tube pan or into two 9-inch prepared cake pans.
Bake at 325\u00b0 for 25 to 30 minutes.
Test for doneness with a toothpick.
Bake longer if necessary, especially if using a tube pan (approximately 1 hour).
Remove from oven and partially cool on rack.
Remove cake from pans and allow to cool completely before frosting.
