Beefy Mexican Corn Bread Casserole - cooking recipe

Ingredients
    1 lb. ground beef
    1 c. self-rising cornmeal
    2 eggs
    1 c. milk
    1 (16 oz.) can cream-style corn
    1/4 c. oil
    3/4 tsp. salt
    1 large onion, chopped
    2 c. shredded Cheddar cheese
Preparation
    Brown ground beef in skillet, stirring until crumbly; drain. Combine cornmeal, eggs, milk, corn, oil and salt in bowl; mix well.
    Pour half the corn bread batter into greased large cast-iron skillet sprinkled with additional cornmeal.
    Layer ground beef, onion and cheese in prepared skillet.
    Top with remaining batter.
    Bake at 350\u00b0 for 45 minutes or until brown. Yield:
    4 servings.
