Ingredients

4 onions, thinly sliced
3 Tbsp. butter
2 Tbsp. flour
salt and pepper to taste
1 clove garlic, crushed
1 tsp. sugar
parsley and thyme to taste
1 qt. chicken stock or consomme
1 c. dry white wine
1 Tbsp. cognac
French bread slices
butter
freshly grated Parmesan or Cheddar cheese
Preparation

Saute onions in butter until onions are limp. Add flour, salt, pepper, garlic and sugar.
Cook over medium heat until mixture is golden brown. Add parsley, thyme, chicken stock and white wine. Simmer 45 minutes; add cognac.
