Scallops And Rice Au Gratin - cooking recipe

Ingredients
    1 lb. scallops
    1/2 c. chopped green pepper
    1/2 c. chopped onion
    1/2 c. chopped celery
    1/4 c. butter or margarine, melted
    1/4 c. flour
    1 tsp. salt
    dash of pepper
    1 c. milk
    2 c. cooked rice
    1 c. shredded cheese
Preparation
    Coarsely chop scallops.
    In butter cook green pepper, onion and celery until tender.
    Blend in flour and seasonings.
    Gradually add milk and cook until thick, stirring constantly.
    Add scallops. Place one-half the rice into a well-greased 1 1/2-quart casserole dish.
    Cover with one-half the scallop mixture and one-half the shredded cheese.
    Repeat.
    Bake at 350\u00b0 for 25 to 30 minutes, or until brown.
    Serves 6.
