Eggplant Casserole - cooking recipe

Ingredients
    eggplant, peeled and cut in chunks
    1/3 c. dry bread crumbs
    1 egg, beaten
    2 Tbsp. chopped onion
    1 lb. hot sausage, cooked, crumbled and drained
    Parmesan cheese
Preparation
    Boil eggplant in salted water until tender, then drain and mash.
    Combine next 4 ingredients.
    Add to eggplant; place in buttered casserole dish.
    Sprinkle liberally with Parmesan cheese. Bake at 350\u00b0 for 30 minutes.
