Candied Grapefruit Rind(Perfect At Christmas) - cooking recipe

Ingredients
    rind of two grapefruits
    1 c. sugar
    red food coloring
    green food coloring
    granulated sugar
Preparation
    Peel grapefruit and cut rind in quarters. Let stand overnight in salt water (1 tablespoon salt to quart of water). Drain; wash thoroughly and cut into strips. Simmer in clear water, changing water several times until the grapefruit rind has no bitter taste (six or more times). When the rind is tender, drain and cook in a sugar syrup of 2 parts sugar to 1 part water until rind is transparent.
