Beet And Potato Salad(Russia) - cooking recipe
Ingredients

2 large fresh beets, boiled until tender and diced into 1/2 inch cubes (canned beets can be used, but the salad won't be as good)
2 large red Yukon or other waxy potatoes, boiled until tender and diced into 1/2 cubes
1 large dill pickle diced
1/4 onion diced
walnut oil or plain salad oil
fresh chopped dill to taste
salt and pepper to taste
Preparation

Mix the diced vegetables and season to taste with salt, pepper and fresh dill. Add just enough oil to moisten the vegetables.
