Huevos Rancheros - cooking recipe

Ingredients
    6 to 8 tortillas
    1 egg for each tortilla
    oil
    1/4 c. chopped onion
    2 cloves garlic, crushed and chopped
    1/2 tsp. dried oregano
    2 to 3 tsp. chili powder
    2 (8 oz.) cans tomato sauce
    salt to taste
    1 tsp. oil
    grated sharp cheese
Preparation
    In a
    skillet, dip tortillas in hot oil quickly.
    Place on paper towels.
    Drain all but 1 tablespoon of oil.
    Heat oil and saute
    onion
    and
    garlic.
    Add
    tomato sauce, oregano and chili powder;
    simmer
    about 5 minutes.
    Salt to taste.
    Crack the eggs in
    a
    bowl
    and put them in the sauce.
    Cover with a lid
    or foil and simmer until the eggs are poached.
    Don't let the
    sauce
    lose to
    much
    moisture.
    Place
    one
    egg on each tortilla and spoon sauce over each; top with grated cheese.
