Ingredients

2 eggs
2/3 c. salad oil
2 tsp. vanilla
1 tsp. grated lemon rind
3/4 c. sugar
2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
Preparation

Beat first 4 ingredients until well blended.
Blend in sugar until mixture thickens.
Sift together and blend in dry ingredients.
Drop by teaspoonfuls, about 2 inches apart, on ungreased cookie sheet.
Flatten with greased bottom of a glass dipped in sugar.
Bake until a delicate brown and remove immediately from cookie sheet.
Bake at 400\u00b0 for 8 to 10 minutes.
