Mango Bread - cooking recipe

Ingredients
    2 c. all-purpose flour
    2 tsp. baking soda
    2 tsp. ground cinnamon
    1/2 tsp. salt
    1 c. vegetable oil
    3 Tbsp. coconut, shredded (optional)
    1 c. brown sugar
    3 eggs, lightly beaten
    1 tsp. vanilla extract
    2 c. mango (ripe), cubed
    1/4 c. golden raisins (optional)
Preparation
    Grease and flour a 1-pound loaf pan.
    Sift together the flour, baking soda, cinnamon and salt.
    In a large mixing bowl, beat together the vegetable oil and sugar, blending well.
    Stir in the flour mixture with the eggs.
    Beat in the vanilla extract.
    Stir in the mango.
    Fold in the raisins and coconut.
    Pour the batter into the prepared loaf pan and set aside to rest for about 20 minutes or until batter bubbles slightly.
    While batter rests, preheat oven at 350\u00b0.
    Bake for 45 to 60 minutes or until the top springs back when lightly pressed.
    Remove and cool on rack.
    Slice and serve with ice cream, fruit sherbet or as a snack.
