Riso Arancia - cooking recipe

Ingredients
    1/2 c. butter
    4 medium carrots, cut in 1-inch strips
    1 medium onion, thinly sliced
    2 Tbsp. grated orange rind
    4 oz. canned green beans, drained
    3/4 c. slivered almonds
    1/3 c. chopped pistachio nuts
    1 c. honey
    1 tsp. turmeric
    1 1/2 tsp. salt
    2 c. long grain brown rice, washed, soaked in cold water for 30 minutes and drained
    3 3/4 c. water
Preparation
    In a medium saucepan, melt butter over moderate heat.
    Add carrots and onions.
    Cook, stirring occasionally, for 5 to 7 minutes or until onion is soft, but not browned.
    Stir in orange rind, green beans, almonds, pistachios, honey, turmeric and 1/2 teaspoon salt.
    Reduce heat to low and simmer, stirring occasionally, for 30 minutes.
