Cajun Rice And Beans - cooking recipe
Ingredients

3 c. cooked rice
1 (15 oz.) can red kidney beans
1 (15 oz.) can pinto beans
1 large onion, sliced
1 c. fat-free Cheddar cheese, shredded
1/4 c. celery, finely chopped
1/2 tsp. Cajun seasoning*
black pepper to taste
any hot sauce to taste
1 (14 oz.) can chicken broth (remove small amount of fat on top)
Preparation

Preheat oven to 350\u00b0.
Spray medium-size casserole dish with nonstick cooking spray.
Layer in casserole, rice, beans, onion, celery and cheese.
Season each layer with small amount of seasonings and hot sauce.
Pour chicken broth over casserole.
Bake uncovered in a 350\u00b0 oven for 30 to 35 minutes or until most of liquid is absorbed.
Makes 8 servings.
