Banana Cake With Quick Caramel Frosting - cooking recipe

Ingredients
    1 pkg. yellow cake mix
    1/2 c. packed light brown sugar
    1 tsp. ground cinnamon
    2 medium bananas, peeled and mashed (about 1 c.)
    1 c. water
    1/2 c. vegetable oil
    1 c. chopped pecans (optional)
Preparation
    Place rack in center of oven and preheat to 350\u00b0. Lightly grease 2 (9-inch) pans with solid vegetable shortening, then dust with flour. Shake out excess flour and set the pans aside. Mix dry cake mix, brown sugar and cinnamon in large mixing bowl. Add mashed bananas, water, oil and eggs. Blend with electric mixer on low speed for 1 minute. Stop the mixer and scrape down the sides of the bowl with a rubber spatula. Increase mixer speed to medium and beat for 2 minutes, scraping down the sides again if needed. The batter should look well blended and the bananas should be well pureed.
