Red-Jacket Potato Salad - cooking recipe

Ingredients
    10 to 12 red potatoes (3 lb.)
    1/2 tsp. salt
    1/2 c. mayonnaise
    1/2 c. pickle relish
    1/4 c. grated onion
    1 tsp. sugar
    1/4 tsp. pepper
    1/4 tsp. salt
    1 Tbsp. white vinegar
    4 hard-cooked eggs, chopped
    lettuce leaves (optional)
    paprika
Preparation
    Peel and dice potatoes.
    Cook in boiling water to cover with 1/2 teaspoon salt for 10 minutes, or until tender.
    Set aside. Combine mayonnaise and the next 6 ingredients.
    Combine potatoes, eggs and mayonnaise mixture, tossing gently.
    Chill.
    Serve on lettuce leaves, if desired; sprinkle with paprika.
    Yields 6 servings.
