Polynesian Chicken(Servings: 12) - cooking recipe
Ingredients

6 whole chicken breasts, split
6 legs
6 thighs
3 (1 lb.) cans fruits (for salad)
6 oz. bottle soy sauce
1 clove garlic, crushed
3 (8 oz.) jars sweet and sour sauce
Preparation

In large, shallow roasting pan, put chicken, skin side up. Drain fruit, reserving syrup.
Pour syrup and soy sauce over chicken.
Add garlic.
Bake, uncovered, at 350\u00b0 for 1 hour.
Baste and turn often.
Pour liquid from chicken into saucepan and add sweet and sour sauce to this.
Boil until sauce thickens and is reduced to about 3 1/2 cups (about 30 minutes).
Pour over chicken.
Refrigerate, covered, overnight.
Next day, in 350\u00b0 oven, bake chicken, uncovered, basting often, for 30 minutes. Then add fruit and bake and baste 20 to 30 minutes longer.
Serve with rice.
Can add toasted almonds to cooked rice.
