Hot Sausage Quiche - cooking recipe
Ingredients

deep-dish pie shell
3/4 lb. hot sausage
6 oz. Swiss cheese, grated
3 eggs
1 1/4 c. half and half
salt and pepper to taste
nutmeg to taste
Preparation

Prick bottom of pie shell with fork.
Bake about 5 minutes at 350\u00b0.
Cook sausage in large skillet until well done.
Drain well on paper towels.
Place sausage in bottom of pie shell.
Sprinkle with grated cheese. In a separate bowl, beat eggs, milk and seasonings with a wire whisk.
Carefully pour over cheese and sausage in shell (this will be very full).
Bake at 425\u00b0 for 15 minutes.
Lower temperature to 325\u00b0 and bake for an additional 45 minutes.
After removing from the oven, let set for 15 minutes before slicing.
Add a tossed salad and asparagus and you have a great supper!
Substitute ham, shrimp, bacon, etc. for the sausage for a change of pace.
