Gourmet Stuffed Potatoes - cooking recipe

Ingredients
    6 large baking potatoes
    1 pt. sour cream
    1 c. pimento cheese or plain grated cheese
    1/4 stick margarine
    1 small onion, grated
    1/4 c. chopped, fresh parsley
    1 tsp. garlic salt
    salt and pepper to taste
    paprika
Preparation
    Bake potatoes until soft.
    Mix rest of ingredients in a large bowl with an electric mixer.
    Cut warm potatoes in half lengthwise and scoop potatoes from shell.
    Add potatoes to the mixture and beat thoroughly.
    Spoon mixture into shells and sprinkle with paprika.
    These freeze fine and may be removed from freezer, warmed in oven and served on short notice.
    Bake 1 hour at 350\u00b0. Makes 12 servings.
