Baked Stuffed Zucchini - cooking recipe

Ingredients
    6 small or 3 medium zucchini
    2 Tbsp. olive oil
    1 clove garlic, finely minced
    1/2 c. unseasoned bread crumbs
    1/2 tsp. salt
    4 Tbsp. grated Parmesan cheese
Preparation
    Preheat oven to 375\u00b0.
    Slice zucchini in half lengthwise. Scoop out the pulp from each half, leaving a shell a quarter-inch thick.
    Brush outside of shells with oil and place in shallow baking dish.
    Chop the pulp.
    Saute garlic in oil for a few seconds.
    Add chopped zucchini pulp and cook for one minute. Remove from heat and add bread crumbs, salt and 3 tablespoons grated cheese.
    Mix thorougly.
    Spoon mixture into zucchini shells.
    Sprinkle remaining cheese on top and bake for 30 minutes or until top is brown.
