"Cool As A Cucumber" Salad - cooking recipe
Ingredients

2 1/2 c. cooked rice
1/2 c. chopped cucumbers
1/2 c. chopped tomatoes
2 Tbsp. chopped green onions with tops
1/2 c. reduced calorie cucumber dressing
6 hard-cooked eggs, quartered
lettuce leaves (optional)
Preparation

In large bowl, combine rice, cucumbers, tomatoes and green onions.
Add dressing and eggs; toss gently until ingredients are evenly coated with dressing.
Cover and refrigerate at least 3 hours.
Serve on lettuce, if desired.
