Corn Bread For Any Time - cooking recipe

Ingredients
    2 1/2 c. self-rising flour
    1 1/2 c. self-rising meal (yellow if you like)
    1/4 c. sugar
    4 tsp. baking powder
    1 tsp. soda/salt
    2 c. plain nonfat yogurt or buttermilk
    1/3 c. vegetable oil
    whites of 4 eggs
Preparation
    Heat oven to 400\u00b0.
    Lightly grease a 15 1/2 x 10 1/2-inch jelly roll pan.
    Mix flour, meal, sugar, baking powder, soda and salt in large bowl.
    Stir in yogurt, oil and egg whites.
    Spread in prepared pan.
    Bake 20 minutes or until light brown and a pick inserted in center comes out clean.
    Place pan on rack to cool. Leave corn bread uncovered overnight to dry out.
    Cut in 1 inch cubes and store airtight at room temperature.
    Can be frozen; use as needed.
