Carrot Bread - cooking recipe

Ingredients
    4 eggs
    2 c. sugar
    1 1/4 c. vegetable oil
    3 c. unbleached all-purpose flour
    2 tsp. baking powder
    1 1/2 tsp. baking soda
    2 tsp. cinnamon
    2 c. finely shredded raw carrots
Preparation
    Preheat oven to 350\u00b0.
    Grease 2 (9 x 5-inch) loaf pans.
    Beat eggs and gradually add sugar, beating until thick.
    Add oil while beating.
    Stir in flour, baking powder, soda and cinnamon, stirring until smooth.
    Stir in carrots; blend well.
    Spoon mixture into prepared pans.
    Bake for 1 hour.
    Cool slightly; turn onto racks to cool completely.
    May be frozen.
