Vegetable Sandwich Spread - cooking recipe

Ingredients
    1 cucumber
    1 small onion
    2 small carrots
    1 green bell pepper
    1 envelope plain gelatin
    1 c. mayonnaise
    salt to taste
Preparation
    Grate or grind cucumber, onion and bell pepper.
    Grate the carrots.
    Put together and squeeze out juice, saving 3 tablespoons of juice.
    Add gelatin to the 3 tablespoons of juice. Put in a double boiler and heat until melted.
    Add to vegetables; fold in mayonnaise and mix well.
    Add salt to taste.
    Refrigerate overnight to blend the flavors.
    Makes 3 dozen party sandwiches.
