Low-Cholesterol Oat Bran Raisin Muffins - cooking recipe

    2 1/2 c. oat bran cereal
    2 tsp. brown sugar substitute
    1/2 c. raisins
    1 Tbsp. baking powder
    1/2 tsp. salt
    1 c. skim milk
    4 oz. egg whites or egg substitutes
    1 Tbsp. vegetable oil
    2 c. all-purpose flour
    1 tsp. baking soda
    1/4 tsp. ground cinnamon
    1/4 tsp. ground ginger
    1/4 tsp. ground allspice
    1/4 tsp. ground nutmeg
    1/4 rounded tsp. salt
    2 large eggs
    1 c. plus 2 Tbsp. frozen thawed apple juice concentrate
    2/3 c. buttermilk
    2 Tbsp. oat bran
    2 small Granny Smith apples, peeled, cored and chopped
    1/3 c. chopped walnuts (about 1 1/3 oz.)
