Breakfast Tex-Mix Muffins - cooking recipe

Ingredients
    1/4 c. oil
    1 c. plus 2 Tbsp. flour
    2/3 c. cornmeal
    2 Tbsp. sugar
    2 Tbsp. baking powder
    5 oz. cooked sausage, crumbled
    3 oz. shredded Cheddar cheese
    3 eggs, beaten
    1 c. buttermilk
    1/2 c. salsa (your choice to brand)
Preparation
    Spray 12 muffin tins with Pam.
    Mix all dry ingredients.
    Add cheese, eggs, buttermilk and salsa. Blend until moistened. Fill tins.
    Bake at 375\u00b0 for about 20 minutes; some ovens, 15 minutes (do not overbake).
