Ingredients

1 large pkg. vanilla instant pudding, prepare as directed with skim milk
1 c. coconut, as follows
3 egg whites
1 tsp. Sweet 'N Low
pinch of sugar
1/2 tsp. vanilla
1 baked 9-inch pie shell
Preparation

Coconut should be fresh because of the sugar.
The day before if needs to be ground and Sweet 'N Low added to taste.
Store in tight container overnight at least.
Prepare pie and topping as you would for any other pie.
High in fat so have small pieces!
