Beet Pickles - cooking recipe

Ingredients
    1 peck beets
    6 c. water
    3 c. cider vinegar
    2 c. brown sugar
    4 c. white sugar
    3 sticks cinnamon
    3 tsp. allspice
    3 tsp. pickling spice
Preparation
    Wash beets and cut tops off to 1 1/2 inches.
    Leave roots on until cooked.
    Boil until skin comes off easy.
    Then cut roots and remaining tops off and peel the skin.
    Slice beets.
