Ingredients

1/3 c. applesauce
1/4 c. reduced-fat peanut butter
1/4 c. honey
1 1/2 Tbsp. oil
1 tsp. vanilla
1 egg white
1/3 c. granulated sugar
1/3 c. packed brown sugar
1 1/2 c. wheat or white flour
1/2 tsp. salt
1/2 tsp. baking soda
Preparation

Beat together wet ingredients and sugars.
Sift together dry ingredients and beat them into the wet ingredients by hand.
Roll tablespoonfuls of dough into balls.
Place 3 inches apart on nonstick sprayed cookie sheets.
Flatten to 1/2-inch thick with fork, making a \"plus\" on each cookie.
Bake 10 to 12 minutes. Cool on pans 1 minute and transfer to wire racks to cool.
