Chimechangas(About 1 Dozen Beef And Bean Filling) - cooking recipe
Ingredients

1 Tbsp. salad oil
3/4 lb. lean ground beef
1 large onion
1 clove garlic, minced
1 large green pepper, chopped
1/2 tsp. each: salt and ground cumin
2 Tbsp. chili powder
1/8 tsp. cayenne
1/2 c. refried beans
1 c. shredded Jack or Cheddar cheese
Preparation

Heat salad oil in frypan.
Add ground beef, stirring to break up.
Cook until lightly browned.
Add onion, garlic and green pepper.
Cook, stirring, until onion is transparent.
Stir in salt, cumin, chili powder, cayenne and refried beans.
Cook, stirring constantly, over medium-low heat until hot.
Fold in cheese and set aside to cool.
Place 1/4 cup filling near center of tortilla.
Fold tortilla around filling, tucking in sides. Fasten with wooden pick.
Deep fry at 370\u00b0.
Turn as needed, until browned.
Remove with tongs; drain on paper towels.
Serve with sour cream, guacamole, tomato and green chili relish.
