Diabetic Oatmeal Cookies - cooking recipe

Ingredients
    1/4 c. nonfat dry milk
    1/4 c. ice water
    1 c. raisins
    1/2 c. water
    1/2 c. margarine
    1/2 c. brown sugar
    1 egg
    1 tsp. vanilla
    1 c. flour
    1 tsp. cinnamon
    1/2 tsp. soda
    1/2 tsp. salt (omit if using self-rising flour)
    1 c. rolled oats
Preparation
    Whip dry milk with ice water for 4 to 5 minutes or until stiff peaks form.
    Boil raisins in water for 2 minutes.
    Drain, reserving liquid.
    Combine margarine, brown sugar, egg and vanilla; beat for 1 minute at medium speed.
    Sift together dry ingredients.
    Add liquid from raisins.
    Add to egg mixture and beat for 2 minutes at low speed.
    Fold in rolled oats and raisins.
    Fold in whipped dry milk.
    Drop from teaspoon 2 inches apart on ungreased cookie sheet. Bake at 375\u00b0 for 15 to 20 minutes.
    Yields 3 1/2 dozen.
    Each equals 1/2 bread plus 1/2 fat exchange.
