Hearty Black-Eyed Peas - cooking recipe
Ingredients

1 1/4 cups cooked bulk pork sausage (1/2 lb. uncooked)
1 can (15 1/2 oz) black eyed peas rinsed and drained
1 can (14 1/2 oz) diced tomatoes, undrained
1/2 cup chopped green pepper
1/4 cup chopped onion
2 cloves garlic, minced
1/2 tsp. salt
1/2 tsp. dried oregano
1/4 tsp. dried rosemary
1/4 tsp. pepper
1/4-1/2 cup shredded cheddar cheese
Preparation

In a skillet, combine the first 10 ingredients.
Bring to a boil, reduce heat, cover, simmer for 10-15 minutes.
Sprinkle with cheese.
Serves 2-4. Serve with salad, cornbread and dessert for a complete meal. Increase quantities for required number of servings.
