Broccoli Salad Parisienne - cooking recipe

Ingredients
    3 lb. fresh broccoli (approximately 8 c.)
    2/3 c. chopped parsley (fresh)
    2 cloves garlic, crushed
    3 tsp. salt
    1/2 tsp. pepper
    2/3 c. olive oil
    1/2 c. tarragon vinegar
    2 tsp. Dijon mustard
Preparation
    Trim broccoli, split and slice into small flowerets and 1-inch strips.
    Wash and drain.
    Mix remaining ingredients in large glass
    bowl.
    Add
    broccoli.
    Toss
    to coat well.
    Cover and chill at least 4 hours.
    Serves 6 to 8.
