Crunchy Taco Chip Chicken - cooking recipe

Ingredients
    4 (3 oz.) skinless, boneless chicken breasts
    1 c. chopped scallions
    1 c. chopped red bell pepper
    1 Tbsp. plus 1 tsp. margarine
    1/2 c. chopped celery
    1 1/2 c. stewed tomatoes
    4 taco shells, coarsely crushed
    1 1/2 oz. shredded Cheddar cheese
    20 small pimiento-stuffed olives, chopped
Preparation
    In a 1 1/2-quart casserole, arrange chicken breasts with thicker parts toward outside of dish.
    Cover and microwave on High for 8 to 10 minutes, until chicken is cooked through.
    Remove chicken to plate; keep warm.
