Spanish Rice - cooking recipe

Ingredients
    1/2 c. chopped onion
    1 (1 1/4 oz.) pkg. taco seasoning mix
    1 1/2 c. water
    1 1/2 c. thinly sliced zucchini
    1 c. frozen corn
    1 (14 1/2 oz.) can stewed tomatoes
    1 1/2 c. instant rice
Preparation
    In a large skillet, saute the onion.
    Stir in the remaining ingredients except the rice; bring to a boil.
    Stir in the rice. Reduce the heat to low; cover and simmer 5 to 7 minutes or until liquid is absorbed; stir occasionally.
    Remove from heat.
    Fluff mixture with a fork.
    Garnish with cilantro and cherry tomatoes, if desired.
    Makes 6 (1 cup) servings.
