Fried Eggplant - cooking recipe

Ingredients
    2 eggplant
    1 egg
    1 c. milk
    salt and pepper
    bread crumbs, flour or cornmeal
    cooking oil
Preparation
    Peel eggplant; slice in rounds.
    Soak in salted water for 1/2 hour; drain.
    Beat egg.
    Combine with milk.
    Dip eggplant in mixture; remove and roll in seasoned bread crumbs, flour or cornmeal.
    Fry in deep fat until golden brown.
    Drain on paper towels.
    Serves 4 to 6.
