Chinese Chicken Noodle Soup - cooking recipe

Ingredients
    8 c. chicken broth
    1/2 lb. chicken or turkey breast, skinned, boned and cut into small pieces
    4 scallions, sliced
    3 carrots, sliced
    2 Tbsp. soy sauce
    1 Tbsp. sugar
    1 Tbsp. sherry
    1/2 tsp. finely minced ginger or 1 tsp. powdered ginger
    4 oz. vermicelli, broken in pieces
Preparation
    Heat broth to boiling in large soup pot; add all ingredients. Cover and simmer 20 minutes.
    Uncover and bring to boil; add vermicelli and cook over medium-high heat for 15 minutes.
    Skim off any foamy particles.
    Serves 8.
