Stuffed Eggplant - "Hasami Age"(Servings: 6) - cooking recipe

Ingredients
    8 eggplants (small)
    1/2 onion, chopped
    5 1/2 oz. ground beef (lean)
    1/2 c. bread crumbs
    1/2 tsp. salt
    1 Tbsp. water
    cornstarch
    1 piece ginger root, grated
Preparation
    Remove stem of eggplant and cut lengthwise in half, but not all of the way through.
    Open and soak in salt water.
    Saute onion.
    Mix ground meat, onion, bread crumbs, salt and water. Divide into 8 parts.
    Wipe off moisture from eggplant.
    Sprinkle cornstarch on cut surface.
    Place layer of meat mixture between eggplant halves.
    Sprinkle cornstarch around meat.
    Heat oil and deep fry over medium heat for 4 to 5 minutes.
    Cook until meat is well done.
    Eat with grated ginger and soy sauce.
