Sweet Potato And Squash Pancakes(Can Be Used As A Casserole, Too) - cooking recipe

Ingredients
    1 tsp. vegetable oil
    2 c. shredded unpeeled sweet potato (about 1 large)
    1 c. shredded unpeeled yellow squash (about 1 medium)
    1/4 c. shredded onion (about 1/2 small)
    2 eggs
    2 Tbsp. chopped fresh or 1 Tbsp. freeze-dried chives
    1 Tbsp. all-purpose flour
    2 Tbsp. lemon juice
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    Heat oven to 200\u00b0.
    Spray griddle or 10-inch skillet with nonstick cooking spray.
    Add oil.
    Heat griddle over medium heat or to 375\u00b0.
    Mix remaining ingredients.
