Chickpea Soup - cooking recipe
Ingredients

1 1/2 c. dried chickpeas
2 oz.(about 1/4 c.) salt pork strips (pork simmered 5 minutes in 1 qt. water, rinsed and drained)
1 c. chopped carrots
2 bay leaves
1 tsp. thyme
8 c. turkey, chicken or beef stock (fresh or canned diluted bouillon)
2 or more large cloves garlic, peeled and minced
1 c. chopped celery
1 c. chopped onion
Preparation

Wash and pick over chickpeas; bring to a boil with stock and pork; simmer for 3 hours.
Add vegetables and seasonings; simmer for 30 minutes more.
Mash about 1/2 of the chickpeas and vegetables into the soup to give it a rough texture.
