Pecan Pear Muffins - cooking recipe

3 c. all-purpose flour
2 c. sugar
2 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
2 eggs
1 c. vegetable oil
1 tsp. vanilla extract
4 c. chopped peeled ripe pears (about 6 medium)
1 c. chopped pecans
Preparation

In a large bowl, combine the flour, sugar, baking soda, cinnamon and salt. In another bowl, combine the eggs, oil and vanilla; stir into dry ingredients just until moistened. Fold in the pears and pecans. Fill paper-lined muffin cups 2/3 full.
