Vegetable Frittata - cooking recipe

Ingredients
    4 medium tomatoes, chopped
    1 c. chopped onion
    1 garlic clove, minced
    2 medium zucchini, cut into 1/8-inch slices
    12 soda crackers (2 x 2-inches)
    5 eggs
    1 tsp. salt
    pepper to taste
    3 Tbsp. oil
    1 tsp. oregano
    1/4 c. white wine
    1/4 c. grated Parmesan cheese
Preparation
    Preheat oven to 325\u00b0.
    Place vegetables and crackers in a large bowl.
    In a medium bowl, beat eggs, salt, pepper, oregano, oil and wine.
    Add egg mixture to vegetables.
    Toss to blend. Pour into greased 9-inch deep dish pie plate.
    Sprinkle with cheese.
    Bake for 55 minutes.
