Potato Carrot Casserole - cooking recipe

Ingredients
    4 c. diced potatoes
    1 c. sliced carrots
    1 small onion
    4 Tbsp. fat (oleo or margarine)
    4 Tbsp. flour
    2 tsp. salt or salt and pepper to taste
    2 c. milk
    1 c. crushed potato chips
Preparation
    Parboil potatoes and carrots.
    Drain.
    Saute chopped onion in fat.
    Add flour and seasonings.
    Stir until well blended.
    Slowly add milk while stirring until thick creamy sauce is formed.
    Pour sauce over vegetables in a casserole dish.
    Sprinkle potato chips on top.
    Bake at 325\u00b0 for 45 minutes.
