Emily Gayles Fresh Apple Cake - cooking recipe

3 c. flour
1 tsp. soda
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 c. sugar
3 eggs
2 c. chopped apples
2 tsp. vanilla
1 c. nuts
1/2 c. raisins (if desired)
1 1/4 c. oil
Preparation

Grease and flour tube pan.
Combine flour, soda, salt and spices; sift and set aside.
In large bowl of mixer, beat at medium speed.
Combine sugar, oil, eggs and vanilla until well mixed.
Gradually beat in flour mixture until smooth.
Fold in apples, nuts and raisins.
Bake at 325\u00b0 for 1 1/2 hours.
