Porcupine Meatballs - cooking recipe

Ingredients
    1 lb. ground meat
    1/4 c. uncooked rice
    1 slightly beaten egg
    1 Tbsp. parsley
    2 Tbsp. chopped onion
    1/2 tsp. salt
    dash of pepper
    1 can condensed tomato soup
    1/2 c. water
Preparation
    Combine meat, rice, egg, parsley, onion, salt, pepper and 1/4 cup soup.
    Mix thoroughly.
    Shape into about 20 small meatballs and place into skillet.
    Mix remaining soup and water.
    Pour over the meatballs.
    Bring to a boil.
    Reduce heat; cover and simmer for 40 minutes.
    Stir often (skimming off excess fat).
    Good with mashed potatoes.
    Can be doubled.
