Ingredients

1 c. shortening
1 tsp. salt
1 tsp. lemon juice
1 1/2 c. sugar
2 eggs
3 1/2 c. sifted flour
2 tsp. soda
1 (9 oz.) can drained crushed pineapple
Preparation

Blend salt, lemon juice and shortening.
Add sugar and cream until light and fluffy.
Beat in eggs one at a time.
Sift flour and soda twice.
Add pineapple and flour to mix.
Drop by spoonfuls on greased cookie sheet.
Sprinkle with sugar if desired.
Bake for 12 minutes at 400\u00b0.
Yields 4 dozen cookies.
