Sweet Potato Surprise - cooking recipe

Ingredients
    6 sweet potatoes, cooked (canned may be used)
    1 1/4 c. brown sugar
    1 1/2 Tbsp. cornstarch
    1 tsp. grated orange rind
    1/8 tsp. cinnamon
    1 c. apricot juice
    1 c. drained apricots
    1 Tbsp. butter
    1/2 c. chopped pecans
Preparation
    Cut sweet potatoes in slices and put into a buttered casserole dish.
    Combine sugar, cornstarch, orange rind, cinnamon and apricot juice in saucepan.
    Cook until thick, stirring constantly. Stir in apricots, butter and pecans.
    Pour over potatoes and bake in 375\u00b0 oven for about 1/2 hour.
