Sunshine Chicken - cooking recipe
Ingredients

3 tsp. curry powder
1 tsp. salt
1/4 tsp. pepper
6 chicken breast halves, boned and skinned
1 1/2 c. orange juice
1 c. uncooked rice (I use Uncle Ben's converted rice)
3/4 c. water
1 Tbsp. brown sugar
1 tsp. dry mustard
Preparation

Combine curry powder, 1/2 teaspoon salt and pepper; sprinkle over chicken, each side of chicken surface.
Set aside.
In large skillet, combine orange juice, rice, water, brown sugar, mustard and remaining salt; mix well.
Place chicken breasts over rice. Bring to a boil.
Cover; simmer for 30 minutes.
Remove from heat; let stand, covered, until liquid is absorbed.
Makes 6 servings.
